Best Shrimp Cocktails Ever!

Try this great high protein meal when Zepbound or Ozempic have run off with your taste for food. Easy to prepare, tastes great, popular with ALL your guests plus shrimp is a high protein food with an easy to eat texture. I get less full with shrimp than other meats!

The key is to poach your own shrimp and NOT buy precooked ones that tend to be rubbery and lacking in flavor.

This is our Christmas Eve meal… perfect with a glass of champagne!

Ingredients
1/2 cup Heinz Simply Ketchup - any ketchup is fine, I just prefer this version
2 teaspoons Sriracha
1 teaspoon horseradish
1 tablespoon olive oil

1 lemon - half for the shrimp boil, half sliced for serving
1/4 cup Old Bay or Tony's Creole seasoning

One pound peeled cleaned frozen raw shrimp - 16-20 per pound is good - place in a bowl in the fridge overnight to thaw

Instructions
Blend ketchup, Sriracha, horseradish, olive oil, a few drops of fresh lemon juice from one of the reserved slices, and set aside.

Fill a medium pot to half with water and add juice from the reserved lemon half and its squeezed rind, Old Bay, bring to a rolling boil, add shrimp, cover pot, remove from heat and allow to poach until the shrimp curl and are just cooked through, 2 to 4 minutes. Drain shrimp, pat dry with paper towels, add to sauce bowl, cover with wrap and chill until serving.

To serve, divide into four martini glasses, using a reserved shrimp and lemon slices as garnish.
