Oh my my, here we are at the doorstep of another holiday meal that I do not care about eating. Ahhh... a GLP1/GIP Zepbound holiday where any doubts about missing favorite foods are smashed to smithereens once I look in a full length mirror and the shock of my slim size hits me.
I was Christmas shopping at OFF Saks Fifth Ave and cried when I saw myself in the giant head to toe mirror in the store. I suspected it was a distorted skinny mirror but my husband looked normal standing next to me. Im a size 8 again... a happy fact that escaped me as I still grabbed size XL clothes to try on, tsk tsk tsk. We will save proportion distortion as topic for another day!
I bought a tenderloin of beef the other day, the kind that is whole in a vacuum sealed bag. They were on sale at my local grocery store and I didn't think to consider who was actually going to eat three pounds of beef.
In a little while, I will open the package, remove the fat and silver skin using my razor sharp boning knife and cut the meat into thick filet mignons for the freezer leaving the two nicest for our Christmas dinner and the scraps that are too thin for a filet to the freezer as well for a stroganoff one night soon.
Thinking that keeping it super simple will be the smartest. I have a high degree of food aversion and once I prepare a meal I do not want to eat it. High calorie high fat side dishes don't entice me, so I will make plain ole mashed potatoes to go with our Christmas beef. No need to guild the potatoes with cream cheese or cheese as the flavor of the potato with just a little butter and milk is really delicious after twenty years of no potato. Sautéed mushrooms and a quick Dijon herb pan sauce with Haricot Vert, really thin bougie green beans, sautéed in garlic olive oil, and that's the plate!
Dessert? Ugh. I dont want to bake a cheesecake as I dont feel like eating it. I ordered cannoli from Carlo's bakery in Hoboken New Jersey. A really good bakery cannoli cant be beat and the Cake Boss makes it easy to have on my dinner table for the holiday.
