Shrimp Salad

When taking GLP1 medications after you've had bariatric surgery, it can be tricky to find something that is appealing to eat. The meds literally kill your appetite but you do have to eat something. A reasonable protein target is 15 to 20 grams per meal to total 50 grams a day. 

This bowl  of shrimp salad is easy to eat, very tasty and a good source of protein. I love this shrimp salad.

Walmart frequently has frozen raw shrimp on sale for $5. Put a pile on a hollowed out Kings Hawaiian roll, OR eat a small dish with a fork. Good stuff!

Shrimp Salad

Ingredients
12 to 16 ounce bag, small peeled cleaned shrimp, thawed.
A fresh lemon
Old Bay seasoning
Mayonnaise
Red onion, finely minced
Celery, finely diced

Fill medium pot to half with water. Cut lemon in half, add juice and rinds to water, add heaping tablespoon of Old Bay seasoning.

Bring to a boil, add shrimp, turn off heat and allow to poach for 2 to 3 minutes. You want the shrimp to be just cooked through. Drain, pat dry on paper towels and mix with mayonnaise, celery and red onion. Cover and chill.
