Mexican Corn & Black Bean Salad

When you are taking appetite killing GLP1 medication it's important to keep meals simple and full of good carbs and protein.

I was watching a Jacques Pepin reel where he explained his philosophy of cooking is combining simple ingredients he has on hand. He then made this corn and black bean salad because he had the beans in the pantry!

He then listed many proteins to serve with this salad - grilled pork cutlet, pan sautéed thinly pounded chicken breast, sliced steak, pan seared shrimp or scallops! It is really a great way to cook.

1 cup frozen corn
2 Roma tomatoes, diced
1/2 small red onion, diced
1 small red pepper, diced
1 can black beans, drained and rinsed
1/4 cup chopped fresh cilantro
Juice of 1 lime, about 1 tablespoon
2 tablespoons olive oil
Salt and black pepper to taste

Toss the corn, tomatoes, onion, red pepper, black beans and cilantro in a large bowl. Drizzle with the lime juice and olive oil, toss to coat and season with salt and black pepper.
