The flavors are wonderful and after a few forkfuls of rice I eat just the shrimp until my Zepbound tells me that I am done. I have never been so happy in my life to have a little rice. With the GLP1 meds, my eating feels normal when compared to my lifetime of restrictive dieting. This is a delicious meal for your entire family that can easily be doubled as this one just serves two albeit generously.
Ingredients
1/2 pound medium shrimp, peeled and cleaned
3 tablespoons avocado or olive oil
1/2 small onion, diced
2 garlic cloves minced
1/2 teaspoon minced ginger or ginger paste
1 cup frozen peas
2 eggs, well beaten
2 cups cooked cooled rice - I use a pouch of Uncle Bens Ready Rice
2 tablespoons soy sauce
2 teaspoons toasted sesame oil
2 green onions, sliced white and green
Instructions
In a large nonstick skillet, heat 1 tablespoon oil over medium high heat, add the shrimp in a single layer and cook for 1 minutes, then 30 seconds on the other side. Transfer to a small bowl.
Add an additional tablespoon of oil to the skillet and stir fry the onion, garlic, and ginger until onion is translucent. Add the frozen peas and cook until warmed through, 2 to 3 minutes. Move the vegetables to the side, add the eggs, scramble until soft set and mix with the vegetables. Add the rice, shrimp, soy sauce and sesame oil to the pan and toss until well combined. Stir in the green onions and serve.
