No Sugar BBQ Sauce - Chicken, Corn and Cole Slaw

No Sugar BBQ Sauce - Chicken, Corn and Cole Slaw

Another easy one. Simple clean flavors that are fast to the table seem to work the best for me while taking high dose Mounjaro, Zepbound and Tirzepatide. I don't feel like eating and often after cooking something, I no longer feel like eating it.

I am writing this in July and the corn I can pick up at the grocery store is fantastic. A few bites of grilled and buttered summer corn are heavenly after my lifetime of avoiding carbs.

I buy organic heritage chicken drumsticks from D'Artagnan Foods that arrive frozen and in one pound packages. It's less expensive to buy from D'Artagnan online than to buy organic chicken locally. My husband and I prefer drumsticks and thighs, so I buy both and stock the freezer.

Pat the chicken legs dry, season with rub and grill on preheated outdoor grill or indoor using a hot oven and sheet pan. Just before they are done, I paint with a sugar free bbq sauce that I make in a jar and store in the fridge. Store bought sauces are either too sweet with horrific amounts of sugar. I like sweet but dont want to put 200 calories in sauce on a piece of chicken.

This is the perfect chicken to serve with boiled and buttered corn and a bag of cole slaw mix tossed with a little mayo, salt, cracked black pepper and a splash of cider vinegar.
