Egg Salad

Yep, this is a super simple one. While taking Tirzepatide, Mounjaro and Zepbound, I really do not want to eat. I am not hungry and find it difficult to think of something that is appealing to my taste.

I do want to maintain a decent protein target, so I have to keep my meals easy and clean. Egg salad is high in protein, tastes good, and is quick to the bowl. 

We will begin with the eggs as until my Aunt Gail shared her secret to perfect eggs, I was actually buying them precooked in the supermarket. After you follow her method you will be shocked that this isn't the only way demonstrated on social media. 

Bring a medium pot of water to a rolling boil on your stovetop. Remove carton of eggs from the fridge and one at a time, carefully lower each egg into the water using a slotted spoon. I usually make 6 at a time. Once water comes back to boiling, lower heat to simmer and ask Siri to put 13 minutes on the timer. 

Meanwhile, fill a bowl to half with ice and to cover with cold tap water. Place on a kitchen towel next to stove. Transfer eggs, one at a time, from pot to the ice water. 

After 10 minutes and cool enough to handle, crack the shells and easily peel. 

Slice each egg using an egg slicer and place in a bowl. For six eggs, add 1/4 cup Best Foods mayonnaise and fold mixture until yolks are well blended. Serve plain or with Everything Bagel Seasoning! I dip into my egg salad with a few Stacy's Pita Chips - they are good carbs.
